You might see if milk is an additional culprit.  Could you try being
gluten-free and dairy-free for a little trial and see if your tiredness and
brain fog would go away?  I suppose you could have the intolerance that some
of us have who came over from the autism list.  It involves gluten and milk,
and wouldn't show up on celiac tests.
