This is soooo easy and so good!!
Sweet'n Spicy Chicken
1 lb. boneless chicken breast, cut into pieces (about 1/2" or so)
3 Tblsp. GF taco seasoning
1 - 2 Tblsp. oil
1 jar (11 oz.) chunky GF salsa
1/2 cup peach or apricot preserves
Place chicken in plastic bag. Add taco seasoning; shake to coat.
Heat oil and brown chicken. Combine salsa and preserves; stir into skillet.
Bring to boil. Reduce heat; cover and simmer for 2 - 3 min. Serve over
rice.
