I received roughly 65 replies, I got so many more than I expected I lost
count. Sorry I couldn't respond to each of you individually but there were
too many!

French Bread Mix (it was mentioned several times that this makes excellent
pizza crust)

Brownie Mix - better when sour cream is used in recipe (if lactose intolerant
probably not a good idea). I'd say this was a tie with Gluten Free Pantry

didn't really have any particular favorites but said everything they had
ordered was very good.

Italian White Tapioca Rice Bread (this isn't a mix but I was assured this is
a very good loaf of bread)
Pretty much everybody thought my idea of the gift basket was a good idea. A
few weren't too sure about it. One writer suggested a fruit basket instead
of "junk" food. The other suggested my friend might not want to be reminded
that she must eat "different".
Some tips:
store the mixes in the freezer they tend to last longer
can substitute applesauce for oil, shortening, or butter in mixes
Other suggestions for my basket:
Add some gift certificates from the above mentioned companies
Add some condiments and sauces
Could put in a tin of already made goodies such as pretzels, cookies,
crackers, or make up one of the mixes for her and add to the basket
Put some GF recipes on recipe cards and add to the basket
*The Gluten Free Pantry carries baskets already made up for gift giving.
Thanks to all of you who wrote to give me your favorites and to several
special people who took the time to send me recipes and other suggestions.
