Thanks to everyone who responded to my request for information on tofu. My
concern was centered on the ingredient- gluconalactone which is identified
as a "non-dairy coagulant derived from food starch," on the Kikkoman and
Mori-Nu firm tofu products. I have listed the responses and have not
checked out the sources for myself.
Nasoya is GF. The woman called, 1-800-229-tofu, to confirm GF status. If
you call you can get some recipes, coupons, and a listing of their gluten
free foods.
Mori Nu is GF. One woman called to confirm GF status. There were two
respondants who said they are very sensitive to gluten and have used this
product without any problems.
I still have not been able to find out the food starch base on
gluconolactone, but will post when I do. Thank you to everyone who responded.
