Celiacs and diabetics often develop weak bones. Besides calcium
supplements, a good source of calcium is green leafy vegetables. Some
drs have suggested that the calcium from green leafy vegetables is
absorbed more quickly and used more efficiently than from some
supplements.

I just found "366 HEALTHFUL WAYS TO COOK LEAFY GREENS" by Linda
Romanelli Leahy . A Plume Book (Penguin)
ISBN 0 452 27511 3

The recipes look good. There are some recipes which contain gluten, but
substitutions can easily be made.

Highly recommened!
Ann
