Does anyone have examples of printed pieces from newpapers, magazines,
brochures, or books in which it is indicated or implied that spelt is safe
for celiac patients? I vaguely recall that there was a cooking article in
the NY Times a while back and I have seen one TV shot (again on cooking)
along these lines. Unfortunately, I didn't keep a copy of the newspaper
article. I would like to have examples of this type of misinformation to
cite in the introduction to an article I plan to write on the structure of
proteins from spelt wheat.
