Someone has posted to the list that GF flours are much
higher in calories than wheat, and it is easy to gain weight
eating them.
I have a suggestion: Switch to baking _by weight_ in the
european manner.
Most of my cooking training has been European, and I weigh
_everything_, including water.
One gram of carbohydrate has approximately 4 calories.
This is true if it is wheat or rice.
The problem comes with portion sizes: since GF breads, cakes, etc.
are more dense, it's necessary to eat smaller portions.
Just some food for thought, and my US$0.02.
