From someone who spent 4 summers at Girl Scout camp on a GF diet:

Meat and Vegetables were always a welcome sight at the dinner campfires that
I attended.

Grilled chicken or meat and vegetables tasted wonderful.  Hot dogs cooked on
a stick over the fire are great too.  Grilled cheese (with GF bread) is easy
if you have a cookie pan.

Here's a meal that that was everyone's favorite.

Foil Dinners

        Take approx. 1/4 lb. of groud beef (size of a hamburger) and put it
in the middle of a piece of tin foil.  Add a generous teaspoon-ful of butter
or margarine.  Heap potatoes, carrots, peppers, onions, and whatever other
vegetables are available on top and close the whole thing up very tightly in
the foil.  Cook the package in the coals of the fire for 5-10 minutes, or
until the meat is cooked and the vegetables are steamed.
        Hits the spot after a day of hiking or sailing!!

Super Baked Potatoes

        Bake a potato in the coals of the fire, then heap lots of stuff on
top - cheese, sour cream, chili, cooked ground beef, etc.  Great as a side
dish or a full meal if the toppings are numerous enough.

Banana Boats

        Slice one banana down the middle (the long way) put chocolate chips
(GF, of course) and marshmellows inside.  Wrap in foil and place in the
coals.  Great dessert!!

Don't forget the GF graham crackers for s'mores!!!
