I work at the American School Food Service Association (ASFSA - school
lunch and breakfast program) and am CD.  Schools should and do
accomodate special diets of their students, including gluten
intolerance.  I know of a number of schools with celiac kids, and they
prepare special meals for them.  If you have any questions regarding
special diets and school meals, I suggest you call email me (Colleen
Kavanagh - [log in to unmask]) at ASFSA.  I can try to collect some of
the recipes being used and give you names of school foodservice managers
currently accomodating gluten-free diets who would be happy to talk to
the manager at your child's school about how to cater to their celiac
customers.
