This seems a good question to pose to the professional list: how to relieve
any immediate ("acute") symptoms of gluten distress such as nausea,
vomiting.
Any such remedy won't prevent intestinal damage, of course. I've never had
such GI distress, yet certainly had a ripe celiac intestinal lesion when
diagnosed.
Had I such a problem, I'd personally try a non-prescription anti-histamine
and ask the gastroenterologist as well. There was an earlier thread about
the role of histamine in immediate responses. Nausea and vomiting may be
the intestine's form of "runny nose", etc. from allergies.
