Marilyn (from Florida) has asked about Trufree flours and how they equate
with products available in thee US.
 
Trufree flours are a commercial brand which is
available in the UK. They differ from many other gluten free flours in
that they are they contain no wheat at all. Many other such products are
derived from wheat from whil the gluten has been removed.
 
I am quoting from their catalogue here:- "Each Trufree flour is a unique
blend of various suitable flours and a binder plus other ingredients
added for flavour and nutritional quality"
 
Trufree flour No 1 contains:- Potato, Pea, Soya, Fructose, Almosnds,
Hemicellulose and Calcium;
 
No 2:- Potato, Pea, Soya, Fructose, Almonds, Rice bran, Hemicellulose,
Carob and Calcium;
 
No 3:- Potato, Pea, Soya, Fructose, Almonds, Hemicellulose, Calcium and Iron;
 
No 4:- Potato, Pea, Soya, Maize, Fructose, Almonds, Methylcellulose,
Calcium, Potassium, Niacin, Thiamin, Iron;
 
No 5:- Potato, Pea, Soya, Maize, Fructose, Almonds, Rice Bran, Methyl
Cellulose, Caramel, Calcium, Potassium, Niacin, Thiamin, Iron;
 
No 6:- Potato, Soya, Rice, Methyl Cellulose, Calcium, Niacin, Thiamin, Iron;
 
No 7:- (a self raising flour for cakes and not bread); Potato, Soya, Maize,
Rice, Methyl Cellulose, Potassium Bicarbonate.
 
Thus, as the manufacturers claim, they are all "wheat free, milk, lactose
and egg-free"
