THis is a fascinating article for celiacs as it highlights 4, probably 5
gluten free, grains from Africa.
 
             pearl millet, fonio, African rice, sorghum and tef
 
THis article is based on the first of a series of reports on "Lost Crops of
Africa" from an arm of the National Academy of Sciences.
 
A Mr. Wayne Carlson in Cadwell, Idaho has been raising teff commercially in
an arid valley on the border of Idaho and Oregon. "Hundreds of acres" are
mentioned. Tef Company and they begain by focusing on "tens of thousands"
of Ethiopans immigrants.
 
Anyone in Idaho who can track this guy down and let him know there are
hundreds of thousands of celiacs around who'd like a lettle variety in
their diet?
 
Arrowhead recently dropped their Tef ( I may have one of the last boxes).
Injera bread fans should let them know they'd like it back.
