I am going to Thailand for 2 weeks in the spring flying on Emirates Airlines. I have already selected the GF meals on Emirates, but wonder if anyone has experience flying this airline and eating the food. Based on their speciality meal selections, they seem acutely aware of dietary needs. 

I will be in Bangkok, Chiang Mai, and Koh Phangan and/or Koh Tao. I am most worried about food on the islands because the selections are much more limited. I would love tips about restaurants, street food, cooking classes, etc. 

On top of not eating gluten due to Celiac, I am also severely allergic to shellfish. This is my very first trip to Asia and although I am extremely excited, I am also nervous about the food.
