Has anyone here talked to them recently about their ingredients?

I was talking to them about getting more sushi with non-wheat
ingredients. I learned two things:

1. They are very much not aware of the gluten issue at all.

2. They were not sure that the actual ingredient list on the package
was accurate.

I was told that actually, the imitation crab now is NOT made with
wheat, but made with corn. On the other hand, there might be
wheat in some of the sauces (which is not listed on the ingredient list).

They did not seem to be thinking that maybe an inaccurate ingredient
list might be a problem, which surprised me.

I do love that there is a sushi vendor at our market. But now I'm
not sure at all what I should eat there. It's sad, because sushi is so
*almost* gluten-free by nature.
