. RICE UNIVERSITY & Gluten Free. (4-8-2011) I was impressed when
talking today with the Dining Director, Mr. McDonald, about how they deal on
campus with food allergies/intolerances/Celiac Disease. When a family whose
youth has a dietary restriction is investigating before accepting
attendance, it is wise - and even essential -- to check out the dining
service. At Rice, they try to house all the people with gluten
sensitivities in the same dorm (called colleges here). A person can buy or
rent an allowable refrigerator/microwave for their rooms. An individual
toaster is also allowed. They have a number of trained chefs doing the
meals with considerable variety. I was impressed with the level of
understanding and implementation of the director.
