Thanks, all, for your wonderful suggestions for GF vegetarian 'turkey' replacements for Thanksgiving! :) Suggestions were:
1. You could bake a big gorgeous hubbard type squash (orange or dark green) stuffed with jasmine brown rice, walnuts, dried cranberries, veggie broth, & seasoned with a masala spice mix--cinnamon, black pepper, cardamon, etc. (I got a big squash last year that actually looked like a plump orange bird...) ...I've also added ground turkey or sausage to the rice for those who don't do meat free.
2. I do like the Southwest flavor GF Sunshine Burgers which start with sunflower seeds & brown rice. Other flavors might be more suited for Thanksgiving. They are pretty soft when thawed & could probably reshapped with a metal turkey cookie cutter...In the spirit of the day, I could get into a meat free alternative if it was shaped like actual turkey.
3. I heard a program on NPR year ago that talked about a vegetarian Thanksgiving that was very thought. They said that the season's harvest was full of colors & the brown turkey was the most boring thing on the table. My Thanksgiving table is now full of fall vegetables--corn, squash, brussels sprouts, while we have asparagus & snow pears at Easter...
4. Our PBS tv station recentl had a recipe from book featuring one dish/pan meals. It was a recipe for succotash--sauteed corn, lima beans, red & green peppers, even a few tomatoes tomatoes. It was sauted rather than stewed so it was fresh & kept all the colors of the season.
