After receiving a reply from Patak's in UK, I have decided to accept that
their curry paste was not the cause of my gluten attack.  It will go down as
one of those for which I will never know the reason.   Here is the reply I
received overnight, and below that is the note I sent to them.  I hope you
continue to use their products with confidence, but it might be awhile
before I get up the courage to try it again!

All of our raw material suppliers are audited and give assurances to the
ingredients being gluten free. Our Quality Control department also ensure
that only ingredients are used from these approved suppliers.

The Mild Curry Sauce we produce on site has no ingredients which contain
gluten within it and no other products made on the same machinery have
gluten containing ingredients either. As a challenge to this, we carry out
random quarterly checks by sending samples to an accredited laboratory from
products made on all lines on the site. To date none of these have had
detectable gluten found in them.

Enquiry : I would like to know how you test your products to determine if
they are gluten-free. I know that UK is different than the US about label
requirements. Do you ever do any testing on them? I have celiac disease and
had a gluten attack twice after eating your Patak\'s Mild Curry Sauce. I
didnt eat anything else, so am attempting to work this out. I am aware that
your company has a good reputation about your gluten free products, and
would like to know how it is determined.
