Hi Celiacs,
Since I was invited to my bro's house for dinner, I had to explain
some of my problems with foods, again, with additions and omissions.
I wanted to share this with you since I have a feeling you all have,
at some time, been in the same (celiac) boat.
Dear Nick,
You and Lise are so wonderful to have us over again!
Please don't worry about my meal. I can bring an apple and some nuts
or something...I just found out that I am intolerant to salt:
I just had a number of days with the following reaction: (from:
http://kurtsprotocol.blogspot.com/2005/07/executive-summary-of-saltc.html)
The symptoms of salt intolerance or salt toxicity can vary. Based on
a brief scan of the research and reports from people believing they
are having salt intolerance symptoms, these could include unusual
pains or functional limitations appearing in the heart, kidneys,
eyes, or nerves. In particular, kidney area pain, severe thirst,
edema, extreme mood swings (possibly due to electrolyte imbalances),
heart or chest area pains, palpitations, left arm pains, severe
shortness of breath, visual disturbances, or motor problems.
I had bought some Kosher salt because the celtic sea salt was making
me itchy....well, I thought I was going to die last week! As soon as
I stopped eating salt, all my symptoms disappeared! Not right away of
course, but gradually I started to feel myself again. It was really
freaky. I had trouble standing up and changing positions and all my
muscles, organs and nerves ached. I felt like I was 90 and ready to
kick the bucket. (Where did that saying come from?)
I had always thought that I was allergic to nuts but it was the salt!
So now I can add salt intolerance to gluten, dairy, sugar, cinnamon,
aspartame, chlorinated water and grain fed meat intolerances. In the
last couple of months I have had a reaction to deer meat - arthritis
in my right foot - and to moose meat - carpel tunnel in my right
hand. Both symptoms disappeared when I stopped eating the particular
animal. I didn't know that they are now farming all the wild animals
now, thus feeding them grains. Except bear in Canada - (I hope). I am
experimenting on myself with some bear meat this week to find out.
I did not react adversely to the delicious salmon that you made last
time I came over tho'. That is a good thing! So far fish has not been
problematic. (except for kelp that contains iodine and that will make
me itchy.)
I reacted severely to a grass fed cow that was supplemented with kelp.
So that is the story of your sister's body. From birth I have been
reacting to grains, dairy et al and the symptoms that showed up were
malnutrition causing severe dental problems, shortness, weight
problems, warts, itchy rashes and behavioural disturbances -
tantrums. It has taken me 11 years to figure out what my body doesn't
like and why.
So thanks for listening. We will be at your place with bells on!
What would you like us to bring along?
Love,
me
