Meeting with Potluck Lunch and Speaker
Covenant Presbyterian Church

We are excited to have Cynthia Kupper, the Executive Director of the Gluten
Intolerance Group of North America, our national organization, as our
speaker this Saturday. This past weekend she attended a conference hosted by
the American Gastroenterological Association where Dr. Joseph Murray of Mayo
Clinic was the lead speaker. Come to this meeting and learn what was
discussed at the conference. After her talk there will be a Q&A session in
which Cynthia will take questions from the audience, so be thinking about
what you want to ask her. To ensure that you don't forget your questions,
you can write them down at home and give them to her before the session.
Cynthia Kupper is a registered dietitian with expertise in celiac disease,
gluten intolerance, and the gluten-free diet. In her position as the
Executive director of GIG, she has successfully launched three food
industry-related programs: the Gluten-Free Restaurant Awareness Program, the
Gluten-Free Certification Organization, and the Gluten-Free Food Service
Accreditation.
She has been an invited expert speaker on the NIH Celiac Consensus Panel,
Health Canada/FARRP testing meetings, and before the FDA. She is a national
speaker for patients, health care professionals and the food industry. Her
publications include numerous peer-reviewed journal articles, a continuing
education manual for dietitians and patient education materials.
Potluck
Before Cynthia Kupper speaks to us, there will be a potluck meal.
Bring a potluck dish, (main dish, vegetable or salad as we will have plenty
to sample for dessert!) and remember to bring a list of ingredients or the
recipe with your name on it. Many members have additional dietary
restrictions, and it is very helpful for them to know what is in each dish.
If you are new to our group you are welcome to come a little early and get
acquainted. If this is your first visit to one of our meetings, we invite
you to be our guest without bringing a dish to share.
Samples
Some dishes for the potluck will be made using samples from a new brand of
mixes: Full Flavor Foods. This company, www.forfullflavor.com, has provided
gravy, sauce, and soup mixes for us to try, and some of our local members
have agreed to make their dish using these mixes. They are all gluten free.
Some are dairy free, and they will be labeled as such.
There will also be a sampling from several of our local companies that make
gluten-free products. Sally Drew, the owner of HDG Foods, www.hgdfoods.com,
will provide some of the products they sell at the Pearl Farmers Market.
Rita and John from The Little Aussie Bakery, www.thelittleaussiebakery.com

their breads and buns. Chef Marissa, www.chefmarissa.com, will be bringing
some of her best sellers in the cakes and cupcakes department.
Got Guts 5K Trail Run, Walk, and Gluten-Free Food Fair

Cynthia Kupper will join Alamo Celiac members at the Got Guts Run/Walk for
celiac disease awareness on Sunday morning. This event also includes a
Gluten-Free Food Fair with samples and products from various event sponsors.
