Well the complete summary is coming..however...I wanted to pass along a gluten-free flour someone told me about from this!!  www.nearlynormalcooking.com   Out of all of my fantastic responses to my question, I got on this website and was intrigued so bought a package with the two 5-lbs flours and the E-cookbook.  My kids and I made the sugar cookie recipe from the cookbook this weekend, and OH MY GOSH..they were absolutely phenomenal!!!  My non-celiac husband was even blown away at how good they are!!  I have also used this flour already as a thickener for a casserole, and it worked PERFECT in that as well!!!  Jules, the one who made the flour, is absolutely wonderful.  She is very nice and helpful!!!  I just wanted to pass this along as I have had celiac since I was 2 (I'm 33 now), and this is the best gluten-free flour I have ever used (in my opinion of course).
