Thank you for all your replies. In summary, it is best to make reservations and
let the staff know that you have Celiac Disease/gluten intolerance both at the
time of reservation as well as when you arrive at the restaurant. Most often
the chef or manager will come out to greet you and address your needs. Even
at most counter service food venues, they will be able to accommodate you.
One poster provided me with an e-mail address for an individual who deals
with special dietary requests. She sent me a wealth of valuable information.

As with everything Disney, it sounds like they will bend over backwards to
make your stay enjoyable.
