This recipe came from Family Fun magazine (December issue) and can be found on their
web site as well altho' I can't seem to find it now so I can provide a link. Anyway, I
thought of you all when I made them. They are easy, delicious, rich and relatively
healthy. I wasn't certain if my 10 yo son would like them, but he really does. If you can
keep from eating them, they last a long time without drying out. They also hold together
well so they are perfect for lunch boxes. Plus you don't need to bake them. Who could
ask for more?! :-)
1/2 cup raisins
1/2 cup dried apricots
1/2 cup chopped dates
3/4 cup dried cranberries
3/4 cup pecans
1 cup blanched almonds
1/4 cup orange juice
1/2 cup granulated or sifted confectioners' sugar
Combine dried fruit and nuts in a food processor and pulse till you get a coarse mixture,
about one minute. Add the oj and pulse again until the mixture sticks together, about 15
seconds. Shape the mixture into 1 inch balls, then roll them in sugar for a sweet coating.
Refrigerate (or not...they seem fine in a air-tight container on my counter for a short
period of time). Makes about 2 1/2 doz.
**Note: I didn't have all the ingredients on hand so I substituted some dried cherries for
the dates and a dash of triple sec and water for the oj (hey, our closest grocery is 70
miles away!). I think you can play a bit with this recipe and still have it turn our great.
They look really pretty in those mini muffin paper liners.
