The response was overwhelmingly positive for whole foods pie crust - I can't wait to try it.  Thank you for all your replies.  Here is the summary:
   
  - it tasted like the real thing
-highly, highly recommended!  They were convenient and great...
  -THEY ROCK!!  It was nice that they are cheaper, 2 for $5
 -It is amazing, I have already stocked up for Thanksgiving. It almost has the same consistency and taste as regular pie crust, just a little "thicker" ( i think is the right description). 
  -very good
  -my daughter-in-law made me an apple pie using this crust and it
 was great.  Even my non-GF son loved it and said it tasted like the real
 thing. 
  -I LOVE the Whole Foods Bakehouse pie crust!! I have made
pecan pie, pumpkin pie, and you can probably do a 2-crust pie like apple by
thawing one of the two crusts that come in the package, and putting it
on top.
-I really like the pie crust they have, I have used a few times, and people didn't know it was gluten free
  - made a spinach quiche in one the other night - yummy!! Doesn't fall apart like others I have used.
  -ok, but not great - mine got alittle hard.  I would just rather have  
something without the crust - tastes better and better for you.  Try  
an Apple Betty, or make like a pumpkin filling in a souffle dish  
instead of a pie shell.  The Whole Foods one will work if you need to  
have a pie.
