My husband and I chose to have a quiet dinner this year. Just a small turkey and potato stuffing (Paskez Passover Crumbs). While we had no other side dishes, we did have chicken soup...which turned out to be needed for the croquette and gravy recipe. What a surprise when the leftovers turned out to be as good as having the turkey on the first day.
Instead of breadcrumbs and regular flour that the recipe calls for, I just used a few spoonfuls of a mix of potato starch, tapioca flour and corn starch. You can probably substitute any gf (not strong tasting) flours. I didn't use any butter, either, just enough olive oil to coat the bottom of both pans.
I didn't have leftover mashed potatoes, so all I did was boil a few small potatoes in the microwave and then mashed them...nothing in them. If you're going to cook the potatoes specifically for the recipe, let them cool before handling them.
