When people speak of 100 ppm per day allowable for ingestion, A normal
GF dieter would eat say 2 kgs of food per day. One would think that
this meant 2 mg of flour.

How much of the flour is gluten:?
How much of this gluten is gliaden?

How much gliaden in a gram (any unit) of flour, barley, rye?

Many thanks Peter in Lex MA
