Hello All-
I have had success with 100% whole grain baking lately. I am milling
unroasted buckwheat. I substitute it for all of the flour. I do still use
xanthan gum. I also have been using sucanat for the sugar. I whiz it in
the blender first. So far I have made: chocolate chip cookies,
snickerdoodle cookies, chocolate muffins, banana muffins, pancakes, and
Irish soda bread. My family enjoyed all of these. I also made pizza crust
and quick tortillas for me.
I hope that this can encourage others in their healthy baking.
