I wanted to post and let everyone know that I recently returned from a week long visit to hotel along the Riviera Maya section of Mexico called El Dorado Seaside Suites. This is an all-inclusive couples only resort. Their parent company is Karisma, and they own several similar resorts in the area. When my husband first suggested it, I was a little worried about the food, but they were very cautious about my meals. At this resort, all meals (with the except of the option for a breakfast buffet) is served a la carte. When I arrived, I showed them my dining card and they shared my information with the chefs through out the resort (there are 5 dinner restaurants). Each evening, you make reservations and they were ready with suggestions for what I could have. It was a wonderful treat to be able to enjoy a four course meal - appetizer, soup, entree, and dessert. I don't think they've had anyone else with celiac disease explain it to them before, but I did not have any reactions while there. They were almost too cautious - I had to assure the waiter and the manager that, yes, I could eat the dessert that contained tapioca, but I would rather them being too cautious then just guess.
