P.F. Changs. (inside the Aladdin) was the winner hand's down. Almost every
single responder suggested them - The lettuce wraps are great. So is the
Chinese salad and lemon chicken) - lots of positive feedback on this one and
their GF menu.
Outback, of course. Multiple locations.

Opa - Greek food (off the strip)
Nine in the Palms - more high-end

Maggiano's - has GF pasta, in Fashion Show Mall on the strip
In-N-Out Burger *For fast food, your best bet is In & Out, as they have
dedicated oil vats for fries, and burgers on lettuce

792-6888 - very helpful and knowledgeable.
At Wynn which is very close to Paris there was Daniel Boulud Brasserie which
overlooks the lake. Specify your gluten sensitivity when you make your
reservation and you may end up with the same knowledgeable waiter.
The restaurant at the Paris (Mon Ami Gabi) to be incredibly understanding,
answered all my questions and said that they tag your order with a bright
yellow piece of paper with your allergies/intolerances written on it so
there are no mistakes made and the food was great
At Wild Bill's Buffalo Wings, the waitress showed me all the sauces that
flavor the wings so I could see which were GF (there were some Definite
surprises)
The chefs at the Hilton Hotel (buffet) were very familiar with gluten Issues
and helpful.
Whole Foods, Wild Oats and Better Nutrition have a variety of GF products
available, salad bars and even GF pizza at Wild Oats.

I've been to a number of conventions in Las Vegas. Go pretty much to any
casino on the strip and eat in their restaurants. They will make your food
GF. They said that they do it all the time. Skip the buffets and the
ready-made-food. Of course, keep away from deep fried because of possible
contaminants in the oil. Ask for your omletts to be made in a separate pan.
Also ask about the hash browns. Some restaurants have their own hash brown
grill and they make pancakes somewhere else. Las Vegas restaurants are no
bargain, but the food is excellent. Enjoy!

I've been to Mandalay Bay, Wynn, and a number of restaurants on and off the
strip.

I have been to Vegas many times with no problems. Aside from the usual
chains ie PF Changs, I have eaten at many places from Aerole at the Mandalay
Bay to Rosemarys ( off the strip) and never had a problem... You have many
many choices!!!!
