My mouth loves tuna salad, but my gall bladder doesn't. The problem is the
eggs, they trigger an attack. Here's a recipe that provides me the creamy
texture I crave w/o the eggs. Great on rice crackers.
Mix together one can tuna (drained), 4 tablespoons chevre cheese (cream
cheese would also work). Stir in a tablespoon or two of olive oil until
desired texture is achieved. Season as desired with salt & pepper, a few
drops of cider vinegar, mustard, dill relish, olives, chopped celery, green
onions, etc.
[Please don't ask me for brand names of gluten free ingredients for this
recipe.]
