I wanted to get some input from others. I was diagnosed w/ Celiac in January 2006 and have been on a GF diet since then. In April 2006 I had a food allergy test conducted, it is FOODStats ELSA, I received my report today. Although I've felt better since January when I started the GF diet, my report indicates that I have many, many food allergies.
I'm allergice to all Dairy, I was told these are IgE, and I think I am to avoid forever. She said beef and lamb are categorized similary. I'm also highly reactive to the folloiwng (she said these are IgG and I should avoid 1 year) - most vegetables, except potatos, olive; most grains/legumes/nuts, including all the beans, corn, peanut, white/brown rice (only lentils are okay); I need to avoid all fruits except raspberry; apples; pearss; apricot; I need to avoid eggs; sugar; yeast. I was told pork; beef; chicken is okay.
I wanted some feedback:
Did I get this test done too soon after being diagnosed w/ Celiac? Should I really avoid all of the things mentioned for a year and dairy permanently? Any other feedback? Now avoiding only gluten seems like a piece of cake! I don't know where to start.
