Looks like the pickin's may be a bit slim in Mobile.  If I find any more treasures, I will post after my trip.

Here's what folks had to advise:

carraba's and outback steakhouse off of airport blvd.

There is a breakfast place downtown called spot of tea that has good omeltes, but their potatoes are not gf. If you can get out to Hill Crest from Airport blvd and take a left there is an restaurant called Gambino Brothers and they have egg plant lagasnga that is gf and is very good.

The only restaurant in Mobile that has a gluten-free menu is Outback Restaurant.  I like to eat there very much.

Other restaurants that I have found to be helpful are Ruby Tuesday, Applebees, and O'Charleys.  You just need to make clear to your server what you need and ask specifically that he take this information to the chef or manager and ask for recommendations from them.
