Hi everyone, Hope you all had a wonderful Thanksgiving!
Mine was enjoyable but there was a lot of food I couldn’t eat as usual.
This year my sister made some pumpkin bars with cream cheese frosting that
Everyone was raving over. So I decided to try my own, something I don’t do
often,
I get tired of recipes always failing. This time worked and they are to die
for!!!
So I am sharing because they are easy and wonderful. ENJOY!
Pumpkin bars
Mix wet ingredients first
4 eggs
2 cups sugar
1 cup oil
16 oz can pumpkin
Mix dry ingredients separately
2 cups flour (I used ---1C. soy flour ½ C. white rice flour and ½ C.
cornstarch)
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. baking soda
½ tsp. ginger
¼ tsp. ground cloves
¾ tsp salt
Mix all ingredients together
Pour into a greased jelly roll pan
Bake in pre-heated 350 degree oven 25-30minutes
Let cool
Frost with cream cheese frosting
1-8oz pkg. cream cheese
½ C. butter
2 tsp. vanilla
4 C. powdered sugar (not so much if you like your icing less stiff)
Beat cream cheese, butter and vanilla till fluffy.
Gradually add powdered sugar, beat till smooth
