Thank you so much to all of you who took the time to write. I so appreciate your responses.
Something important that I learned is that it makes a difference whether the rice cakes come from Quaker USA or Quaker Canada. Cross contamination is an issue in the US, but in Canada the rice cakes are produced in a gluten-free plant. Since I didn't ask in my message, I don't know if listmates were responding regarding US or Canada cakes.
A number of people said they have been eating Quaker rice cakes for years with no problems. (Some of these were from the US)
A few people said they had had reactions - one to all types, some only to those with flavors. One family had a very bad DH reaction to the Quaker cakes.
To crisp rice cakes, people suggested toasting them very lightly in the toaster or microwave. Everyone warned that they burn very very easily, so be careful.
One woman uses the silica packets that come with some medicines to keep her rice cakes fresh. She said this works well.
Some people recommended Trader Joes rice cakes, Hain rice cakes (including mini rice cakes which can be ordered through Amazon), Real Foods multigrain rice cakes (can be found at Whole Foods), Real Foods Corn Thins, Orville Redenbocker popcorn cakes, Corn Rounds (Whole Foods), Mother's, and Lundbergs.
