In the UK there is a popular sweet (candy) called barley sugar. My food list
gives a dozen brands that are OK. It is the colour of barley. Bear in mind
that a) France may be close to the UK, but it has a different culture and
the sweet might not be the same; b) it is made from boiled sugar, so flour
might be used to stop it sticking to surfaces while it is drawn out and
cut up - this is especially likely if they are using traditional methods
of production.
