I had surgery this past week at the Albuquerque Regional Medical
Center. Of course, one of my greatest concerns was the celiac diet. I
was put in touch with one of the dietitians, who dug in and saw that
I got excellent meals -- and not all just chicken and rice like I've
seen in other hospitals. It CAN be done!
