Peaches are at their prime in Colorado. Add peach slices to the Ruby Range Southwest Pancake Mix and serve with raspberry sauce or maple syrup for a great breakfast. I served this to friends from Denver who owned a 5 star restaurant. They swore they were the best pancakes they had ever eaten - and they don't even eat gluten free!
Here's a lunch box recipe that my grandkids love. No one will ever guess these are gluten free! The taste of mesquite blends wonderfully with the flavor of peanut butter.
1 /2 cup butter
1 /2 cup peanut butter
1 /2 cup white sugar
1 /2 cup brown sugar
1 egg
1 /2 teaspoon vanilla
1 /4 teaspoon salt
1 /2 teaspoon baking soda
1 cup Ruby Range Basic Mix
Cream butter, peanut butter, sugars mix in egg, vanilla, and salt. Mix in Ruby Range Flour, baking soda and salt. Ad more flour if not batter is not stiff enough to drop on the cookie sheet. Drop by the spoon full on an unbuttered cookie sheet. Flatten and mark tops with a fork. Bake at 350 for about 10 minutes or to desired doneness.
