Here's a recipe for some very nutritious & tasty GF French Toast from The
Silly Yak Bakery. If you don't get the fresh-baked Cinnamon Swirl from SYB (*),
via her mail order process, no problem -- you can certainly use your own cache
of GF cinnamon bread.
SYB's Simply Amazing GF French Toast
8 slices - SYB GF Cinnamon Swirl Bread
2 medium bananas -- cut in 1/4 inch slices
1 cup milk (sorry about casein free reqmts)
4 ounces softened cream cheese
3 eggs
1/3 cup sugar
3 Tbs. Holly's GF Flour Mix (Avai at SYB - or use your own GF flour mix)
2 tsp. vanilla
Get oven up to 350 Deg if you want to serve same day - within an hour or two.
Place 4 slices of SYB GF Cinnamon Swirl Bread in a single layer in a buttered
9" square bake dish. Top each slice with a layer of bananas & remaining 4
slices of GF Cinnamon Swirl Bread. Gently blend milk, cream cheese, eggs, sugar,
Holly's GF Flour mix & vanilla until smooth. Pour over GF Cinnamon Swirl
stack. Let stand 5 min before putting in oven or OK to refrigerate overnight. Bake
350 Deg for 40-45 min until the stack & top are "toasted." Bake 50-55 Min if
out of the frig. Let it stand for 10 min. Cut into nice serving pieces & pass
out to the hungry family. An option is to dust your yummy GF creation with
powdered sugar.
