Here is a great dessert using the wonderful fresh fruit at farmers markets this month. My family likes this so much that it is served at birthdays instead of birthday cake.
Southwest Fruit Crisp
Topping:
1 cup Ruby Range Flour Mix
1/3 cup Sucanat or brown sugar
1/8 teaspoon salt
1/4 cup butter room temperature
1 tablespoon toasted pine nuts or pecans - both nuts compliment the mesquite flavor
Filling:
3 cups peaches, apples, pears or any desired fruit (frozen peaches work well)
1/3 cup Sucanat or sugar
1 Tablespoon fresh lemon juice
1/3 teaspoon cinnamon
1/8 teaspoon nutmeg
Preheat oven to 375
Mix dry ingredients for topping. Cut in butter until in pea size pieces.
Spray a baking pan with canola oil or butter the pan. But in fruit, mix rest of ingredients. Add topping. Bake for 30 minutes or until bubbling.
