My wife has recently been diagnosed with Celiac.  We are adjusting to
the diet rather well so far (at least we think we are).  She had a
meeting with a nutritionist yesterday and personally neither of us
thinks she was very good based on some of her comments and
recommendations.  

One we question is the interaction between the celiac disease and
lactose intolerance.  After reading the FAQ's I am aware that many newly
diagnosed celiacs have lactose intolerance due to damage to the villi
and the fact that the villi tips produce the lactase enzyme.  The
nutritionist however recommended my wife have no dairy (or soy for that
matter) for 9-12 months as the lactose and soy will slow or even prevent
the villi from healing.  This is the first we've heard of this and are
interested if this is a general consensus or more likely some incorrect
information.  Has anyone heard this before?  If they have what is the
recommendation for the amount of time necessary to avoid these products?
I should add my wife has not been having any issues with these products
since going on the diet.

Another question my wife had (she's not on this list yet) for the
nutritionist was what happens when one does actually slip up and ingest
some gluten?  How much damage is done and how fast?  Is it OK to cheat a
bit if your symptoms when you do so aren't to extreme?  Based on what
I've seen on the list there seem to be a wide difference in opinions.
The nutritionist said once the diet is well established it is OK to
cheat every once in a while. (We don't think this is very good advice)
