Thanks for all the responses I received regarding my request for donut hole ideas:
I got lots of responses. Of all of them, I had time last night to try (and had the ingredients for) SURPRISE DOUGHNUT HOLES from "The Gluten-Free Gourmet" by Bette Hagman. I believe I will ge going to buy this book.. They turned out pretty good and were very light. It took some practice to begin with but I got it down.

OTHER IDEAS WERE:
*I bought a Doughnut Express baking pan set at Target for $20. It has a pan for small, regular size & filled doughnuts. I just replaced the wheat flour with Wendy Wark's GF flour mix ( but I'll bet Bette Hagman's GF mix will work just as well). Covered in chocolate & sprinkles, my kids ate them right up.. I'll bet you could even use GF cake mix.
*Try the Gluten Free Gormet cookbook
*You could make very small muffins and roll them in sugar, instant donut holes.
*When my son has one of those events I send him with some Reeses Peanut
butter cups, or a big Butterfinger. The other kids are envious, and my
son doesn't feel left out. Not the healthiest choice, but....
*Glutenfree pantry has a lot of pre-mixed thingsavailable that are easy to bake. Their muffin mix is great. I added bananas formoisture and blueberries for flavor.
*recipe I use for donuts is at www.celiac.com. Go into recipes-Pastries-Donuts
*use any reg recipe....just use cornstarch as the flour. you don't need any gums
etc and they turn out light and delicious
*suggested making dough (anything on hand i.e. pancake mix or muffin mix), rolling into balls, frying in a pan then sprinkling with sugar.
*What we do for donuts is make up a biscuit mix - either homemade or there are mixes already made for purchase then we drop a spoonful of biscuit mix into oil & deep fry them just like real donut holes. We then put powder sugar on them. She loves them.
* make donut holes with leftover GF bread dough mixture adding some sugar to it and deep frying spoonfuls. I roll them in powdered sugar or cinamin sugar as they come out. I use a combination of 2 parts brown rice flour 1/2 part corn flour 1 part potato starch and follow the directions on a bag of GF pantry french bread mix for my bread recipe.
