Listmates,
I was checking an item on Whole Foods' Gluten-Free list and checked
out the Featured Recipe for Gluten-Free Cupcakes with Raspberry
Frosting http://www.wholefoodsmarket.com/recipes/gf_cupcakes.html
I have not tried the recipes yet, but plan to use the Raspberry
Frosting on a Lemon Cake (from mix) and serve it with some fresh
raspberries as added decoration. The cupcakes use 6 egg yolks (makes
16 cupcakes) and would be a good one to use when you are making a
recipe with a lot of egg whites.
Note: I have no financial interest in Whole Foods. I am biased, as
I do think they do a wonderful job with the Gluten-Free section in
the Health Info on the website and am thankful that I live where
there are two stores.
