I don't know if the show was a rerun or not, but there was a Chef, with
authetentic Irish credentials, making Concannon soup on Sara's Secrets.

When the soup was finished, they tasted it and he commented, "We don't
thicken it with flour."  Sara Moulton said something and he continued,
"because there are so many Celiacs, you know."

This was one of the very few times I've heard a Chef mention why something
didn't use flour in relation to Celiac Disease!
