Hi List:
What a support you all are!! I received many replies as to whether anyone else had had problems with Tree of Life Tamari Sauce, which is clearly labeld "Wheat Free" and made with "corn-fermented alcohol."
As per one suggestion I contacted the company (the no. is not on their label).
Tree of Life Wheat Free Tamari is NOT gluten free.

The really hard part of this is that I have to throw out a large quantity of food; besides the chicken, I stupidly (as it turns out) added some of the bones to my rich, homemade stock that is now contaminated with that sauce, and would explain the ongoing reaction I have had. It is definitely not economical to be gluten free.

"Soy sauce and miso are made with a culture called koji.
The koji culture can be grown on many grains, the common ones are
wheat, barley, and rice. The koji can also be grown on soybeans.
I know Westbrae grows their koji starter cultures on barley for their wheat
free soy sauce. When I react to a "wheat free" soy sauce I suspect barley.
I use Mansan Tamari that I order from Natural Import company,

828-277-8870 or 1-800-324-1878. They have many other products that are gf
including gf miso varieties. This vendor uses the term tamari for wheat free
soy sauce. I have reacted to their yamaki tamari in the past. I order a
gallon of the tamari and store it in the refrigerator as it is unpasturized."
