Pumpkin soup can be very nice:
I know a recipe where the pumpkin is used as tureen for its own soup.
The hollowed out pumpkin with its "lid" is filled with the soup, and baked
in the oven for a couple of hours. The soup: Pumpkin + fond(or water),
lemon or lime(fried), garlic, tomato, chili, ginger, thyme, laurel etc..
What is the nutrient content of pumpkin ? , carbohydrate content?
