Last weekend, I promised my celiac daughter we would make Christmas
cookies on Sunday.  After partying a little too hard on Saturday night, I
could muster no enthusiasm for any of the recipes I could find, which
involved mixing various types of flours, etc.  Then I remembered that the
GF Pantry's cookbook for its Cake and Cookie mix had a recipe for
roll-and-cut sugar cookies.  And in an even greater stroke of luck, I
found I had the mix on hand!

Eureka!  They were easy to make and very, very tasty.  No "funny"
aftertaste or graininess.  Actually, they taste a lot like Pilsbury slice
and bake cookies.  I did find that I needed to use 2 eggs rather than the
1 called for by their recipe.  But they are great, and are disappearing
quickly!

I have no financial interest in the GF Pantry, but I wish I did!
