Two to three times a week I will bring a whole head of lettuce, kale or cabbage to work and snack on it throughout the day. I rinse it and dry it at home, then just peel away leaves and eat them. Red cabbage is my favorite; I find it very easy to eat plain and raw. If the greens are too bitter, as is sometimes the case with kale, I will eat it with a little bit of nut butter (tahini or home-made almond or walnut). I also consume a fair amount of spinach, microwaved with a little bit of soy sauce (raw wheat free tamari actually). This is another simple way to eat greens at work: just bring a tupperware container full of pre-rinsed (and chopped if you prefer) spinach. Nuke it and add a bit of soy sauce or whatever other seasoning. (Presently, I'm searching for a paleo alternative to soy sauce. Suggestions?) This would probably work with kale too. It never fails to surprise me how tasty plain raw vegetables are, nor how shocking it is to my coworkers that I eat them. -Bruce
