Are you going paleo to: (1) lose weight, (2) solve some health problem, or
(3) prevent future civilizatory diseases? Whether you are looking to lose
weight will influence how many carbs should be in the diet.

Having celiac disease I must be gluten-free. Also I prefer to remain
dairy-free. I also avoid MSG and its hidden forms. When eating out I will
cheat on the other aspects of the diet. For example I will eat in Indian
restaurants, which means I am getting corn oil and some bean flours. Then I
will eat rice and potatoes out. But I am not using the diet to lose weight.
