<<Disclaimer: Verify this information before applying it to your situation.>> Hi everyone, This is in case more than the one person (who responded to my query wanting the results) wanted to know which emulsifiers are gf/not gf. I got no replies at all, which is a bit of a surprise. I talked to my dietician who also says not all emulsifiers are gf, since wheat flour is an emulsifier (but of course wasn't able to be more enlightening on which additives it's in). I gather I'm supposed to stick to our NZ GF food list. Not as easy to do as she thinks, specially when confronted with the choice of an unlisted brand or nothing. I've just had an email from a company that has just discovered that the "non gf" cheese flavouring in several of their snack foods is now gf - made with tapioca starch, and when I rang to enquire how I could tell from the packet, was told the starch in the flavouring would have changed sometime in the two years or so since they last analysed the product, possibly a year ago! Somehow my confidence in relying on the "list" has been somewhat undermined. I'm still interested in knowing more about emulsifiers if anyone has the information, but meanwhile have bought "A pocket guide to Food Additives" by Donald and Elisabeth Saulson (c.1991, VPS Publishing, P.O.Box 2705-261, Huntington Beach CA 92649.
