If memory serves, they are the roots of a large flowering sunflower plant that has no relationship to grasses and I just can't imagine how there can be any gluten content. Perhaps someone has assumed that because there is pasta made with Jerusalem artichoke flour (but always containing some other flour that makes it stick together - and usually THAT flour is regular wheat flour) that the Jerusalem artichokes contain gluten. I doubt that that is the case. Gayle K
