These are top notch and much more health flour combination than other rice/tapioca,potato flour combinations. I keep a sliced loaf of the dark break in the freezer for a quick sandwich or breakfast toast. It takes like dark rye. I know that Joan Wade, the owner, is extra careful about the source of all of her ingredients, and they're very healthy for celiacs.
